For a brand, early harvest is part of the product. For a bulk supplier it pays only when buyers reward it. What the grove gives up, what the bottle returns and what the mill must ask of growers.

Olive oil is splitting into a scale business built on hedgerow groves, large mills and private label, and a differentiated one built on origin, estates and brand. Both models can work. The increasingly uncomfortable place is the middle: good oil, respectable packaging and no clear reason to pay more.

Spanish farm data suggest that one litre of olive oil embodies about 0.132 litres of agricultural diesel before it reaches the mill. At the 1.405–1.649€ per litre prices reported in September 2026 that is 0.19–0.22€ per litre of oil gross, or 0.15–0.18€ where VAT is recoverable, around 4–5% of full production cost.

Brazil imported 80,768 tonnes of olive oil in 2024/25 and purchases rose 40.5% in the first half of 2025/26. Lower export unit values and the removal of the 9% duty on extra virgin explain much of that rebound. Neither explains Portugal's 62% share, which was built through brands, packaged distribution and decades of market development.

A study presented this year by Juan Vilar Hernández and Sergio Caño forecasts that 603 Iberian mills could disappear over the next decade, 472 in Spain and 131 in Portugal. Consolidation is real, but throughput is a warning rather than a verdict: the tariff, cost control, liquidity, extraction performance and a loyal supplier base decide which small plants survive.

Spain held 863,338 tonnes of olive oil at the end of April 2026, and almost seven in ten tonnes of it sat at the production end of the chain. Olive oil is already financialised through inventory and credit lines. What the MFAO proves is that the missing piece was never only regulation.
