Why is extra virgin the most expensive grade?
Extra virgin (acidity below 0.8%, no sensory defects) is the highest grade and requires sound fruit, careful timing and cold extraction. Anything that fails the chemical or organoleptic tests is downgraded to virgin or lampante, which trade at a discount.
Which origin sets the benchmark EVOO price?
