Italy is the olive oil market's great paradox: one of the world's best-known producing countries, yet structurally short of oil. Domestic production covers only part of what Italian bottlers blend, bottle and export, so Italy is simultaneously a major producer and one of the largest importers of bulk oil, much of it Spanish, Greek and Tunisian.

That structure keeps Italian extra virgin at a persistent premium over Spain: genuine Italian origin is scarce relative to the brand demand attached to it.
