The Spain market

Spain is the reference market for olive oil: it produces roughly half of the world's supply in a normal campaign, and prices agreed at origin in Andalusia set the level every other origin trades around. The quotes above come from official weekly prints and cover the three commercial grades (extra virgin, virgin and lampante), so the full Spanish price structure is visible on one page.

Spanish origin prices respond to the size and quality of the Andalusian harvest, the pace of exports and bottler demand, and carry-over stocks held by mills and cooperatives. The grade spreads matter as much as the level: a narrow gap between lampante and extra virgin signals scarce quality oil, while a wide one points to an abundant, sound harvest.
