MITECO publishes reservoir storage every Tuesday for every peninsular reservoir above 5 hm³. For the olive market the line that matters is the Guadalquivir basin, which supplies the irrigated groves of Jaén, Córdoba and Seville.
Irrigation is what separates a poor crop from a failed one in a dry year. A basin that keeps drawing down through August and September raises the odds that allocations are cut again for the 2026/27 season, which would push the crop risk currently in the price from probability towards fact.
