Spain's international gastronomy summit, in its 25th edition. Chefs, producers and the food trade meet at IFEMA MADRID for three days of stage demonstrations and an exhibition where Spanish olive oil producers and denominations of origin regularly show their oils.
About Madrid Fusión 2027
Madrid Fusión Alimentos de España 2027 runs from 1 to 3 February. For its 25th anniversary the congress moves to a new layout at IFEMA MADRID, taking the ground floor of hall 14 and the whole of hall 12, which brings all its stages onto one floor for the first time.
For olive oil it is a showcase rather than a trading floor: brands, mills and regional bodies use it to put premium and early-harvest oils in front of chefs, food media and the restaurant trade at the start of the year.
