The INE publishes a flash estimate on the last working day of the reference month and the detailed index, which breaks out olive oil as its own product class, around the middle of the following month.

It is the cleanest public read on whether the fall in origin values has reached the shelf. Retail prices that keep falling support the volume recovery the demand factor is waiting for; prices that stop falling while origin rises squeeze packer margins and slow their buying.
