How Olive Oil Is Traded

Unlike soybean oil, palm oil, or rapeseed oil — which trade on established futures exchanges — olive oil does not have a standardised, liquid futures market. Trading is primarily conducted over-the-counter (OTC) between producers, brokers, bottlers, and importers.

The primary reference prices are published by the Spanish MAPA (Ministry of Agriculture), the IOC, and regional price reporters. These spot prices reflect actual transaction prices in the main production regions and serve as the market benchmark.

Price Discovery

Without a centralised exchange, olive oil price discovery is less transparent than for other vegetable oils. Producers and buyers with better market intelligence have an advantage in negotiating prices.
